We were approached by an award winning restaurant chain “Cornish Fish and Chips” to produce a bespoke guide that could be used as a blueprint across the industry for best practice on sustainability topics. Concerned that many businesses in their industry were too small to get expert advice our client wanted to produce a simple framework that would help these establishments look a ways to reduce their energy usage, promote sustainable choices to consumers, consider the implications of packaging and also allow the user to understand the train-offs between locally and sustainably sourced fish stocks.
